I am very pleasantly surprised by the sharpness of the knives. I tested them in various conditions and I must admit that they are durable, with a hardness of approximately 57-58 HRC, well-balanced and reliable. It’s worth investing money in such knives that will serve us for many years. We won’t sharpen them with an ordinary kitchen sharpener – a diamond stone with grit 1000 and 3000 would be useful.
